Shortbread Recipe for Cookie Cutters

Simple but delicious shortbread recipe.  This recipe works well with cookie cutters because the butter content so it acts as grease in the dough to release easily from the cutters.  You can chill it before cutting out your shapes if using very small or fiddly cutters but for most shapes you can roll and cut straight away.  Great for baking with impatient kids!

Ingredients

Melted butter, to grease (optional)

250g butter, at room temperature

100g (1/2 cup) caster sugar

300g (2 cups) plain flour, sifted

90g (1/2 cup) rice flour, sifted

Method

Preheat oven to 150°C. Brush 2 baking trays with melted butter to grease or use baking paper.

Use an electric beater to beat the butter and sugar in a bowl until pale and creamy. Gradually add the combined flour, beating on low speed until almost combined. Use your hands to bring the dough together in the bowl. Turn onto a lightly floured surface and knead gently until smooth.  If the mixture is too wet add a little more flour and if it's too dry and crumbly add a dash of water.

Roll the dough out on a lightly floured bench to the thickness you desire and then cut out into whatever shapes you take your fancy.  Sprinkle cookies with sugar at this stage if you aren't decorating with icing after they are cooked.  Transfer cookies onto a baking tray and bake for approximately 12 - 20 minutes or until lightly golden in colour.  Leave to cool on the tray for 10 minutes before transferring to a cooling rack to cool completely.  Decorate as desired.

Caring For Cookie Cutters

We source our cookie cutters from all around the world including Europe, USA, China and Australia.  The majority of our cutters are made from tin plate or stainless steel with a few plastic ones also.  Below are care instructions to help you get the best out of your cookie cutters.

Stainless Steel cookie cutters are the most durable and sturdy of the metal cutters.  While these cutters are dishwasher safe we recommend hand washing and drying where possible as dish washers these days are so powerful they are harsh even on the highest grade stainless steel.

Tin Plate cookie cutters are probably the most common cutters around.  They are relatively inexpensive and tin is very pliable so can be easily made into all sorts of fancy shapes.  Tin plate cutters must be hand washed and dried promptly to avoid any surface rust.  I learnt a great tip from my mum in ensuring they don't rust, after they are washed and towel dried pop them into the warm oven to make sure they are 100% dry before putting them away.  Being pliable is great because the cutters can be manipulated slightly if you wish to change the shape of your cutter but it also means that you need to be careful when storing them so you don't accidentally bend them out of shape.

Plastic cookie cutters are the most durable of the lot.  They can be popped in the dishwasher in the top rack rack and can air dry.  While they haven't been the favourite with collectors but they certainly should not be overlooked for their functionality.
