1 1/2 cups gluten-free 1:1 baking flour blend (we recommend King Arthur Flour
1 1/2 teaspoons kosher salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup copha
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/3 cup water, at room temperature
1 to 2 tablespoons vanilla extract
1 2/3 cup of allergen free chocolate chips
1. Preheat oven to 175º C and line baking sheets with baking paper
2. Combine flour, salt, baking soda and baking powder in small bowl.
3. Beat copha, brown sugar and granulated sugar in large mixer bowl until it has a sandy consistency. Add water and vanilla extract and mix well.
4. Gradually beat in flour mixture and stir in chocolate chips.
5. Place a tablespoon sized amount of the mixture onto prepared baking sheets and flatten into a rounded disc.
6. Bake for 10 to 12 minutes or until slightly golden. Cool on baking sheets for 10 minutes; remove to wire racks to cool completely.
7. Store in airtight container. Makes about 36 cookies.
