3 cups all-purpose flour
1 tsp baking powder
1 tsp salt
1 cup butter, softened
1 cup sugar
1 large egg
1 tsp vanilla extract
1 tbsp milk
Cadbury Mini Eggs
Gingerbread Cookie Cutter
1. Whisk flour, baking powder and salt in a bowl.
2. In a seperate bowl, beat butter and sugar until fluffy and pale in colour. Add egg, milk and vanilla and beat until combined.
3. Slowly add the flour mixture until combined.
4. Shape the dough into a disc and wrap in plastic. Refrigerate for 1 hour.
5. When ready to roll, preheat the oven to 175ºC. Lightly flour a clean surface and roll out the dough. Using the gingerbread cookie cutter, cut out shapes and place them upside down on a lined baking tray.
6. Place a mini Cadbury egg into the centre of the arms and gently place around the edges of the egg (please note that they will not wrap around the egg completely). Using a toothpick, poke out eyes and nose.
7. Bake until the edges are lightly golden - 8-10minutes and transfer to a cooling rack to cool down completely.
