3 cups all-purpose flour
5 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup unsalted butter (softened)
1/2 cup granulated sugar
1 large egg
1/4 teaspoon vanilla extract
1/2 cup honey
Royal icing (optional to decorate)
Sprinkles (optional to decorate)
1. Whisk flour, cinnamon, salt and baking powder together in a bowl and set aside.
2. Beat the butter and sugar together, using an electric mixer, until light and fluffy. Beat in the egg, vanilla and honey.
3. Add the flour mixture and mix until a dough forms (scraping the sides of the bowl to ensure all mixture is incorporated).
4. Halve the dough, wrap it in plastic and chill for 2 hours or overnight.
5. Preheat the oven to 175 degrees celsius and line baking trays with baking paper.
6. On a lightly floured surface, roll dough and use your chosen cookie cutters to cut shapes. Transfer to baking sheets and bake until cookies are just done, approximately 7-9 minutes.
7. Once the cookies have completely cooled, you can decorate with royal icing and sprinkles.
