Kathryn's Mum's Christmas Biscuits

Kathryn asked her mother for this recipe when she was feeling homesick while living in the USA.

This is an extremely simple recipe but that's its beauty - it works with cookie cutters and stamps. The perfect recipe for little kids who can make biscuits alongside parents and grandparents.

You can wait until they're cool to ice them or add sprinkles or hundreds-and-thousands or non-pareils or any kind of sugar to the top before they go in the oven.

 

Ingredients

1/4 lb butter

1/3 cup caster sugar

1 egg

2 cups self-raising flour

OPTIONAL: Vanilla, orange essence, or almond essence

 

Method

1. Cream butter and sugar together

2. Add egg and mix

3. Add flour, mix briefly

4. Roll out with a rolling pin

5. Cut shapes with cutters or use cookie stamps to decorate

6. Transfer to a baking tray and bake at around 200C for 5 - 10 min

Optional: Add icing, or dip in chocolate
