2/3 cup brown sugar
2/3 cup caster sugar
1 1/3 cup self raising flour
2/3 cup plain flour
2 tbs cocoa
200g butter, melted
1 egg
1/2 cup white chocolate melts
1/2 cup dark chocolate melts
1/2 cup milk chocolate melts
2 Litres Vanilla Ice-Cream, softened
1 1/2 cups of dulce de leche
1. Preheat oven to 180.
2. Place all cookie ingredients into a bowl and use your hands to mix together.
3. Line two baking trays with paper. Roll the cookie mixture into balls and place on the trays and then place in the freezer for 10 minutes.
4. Bake the cookies for 20mins, or until a crust has formed and then set aside to cool.
5. Spread the dulce de leche on two cookies and then spoon some ice-cream in between them to make a sandwich.
